This week’s budget meal plan focuses on healthy ways to use up leftover ham or lamb from Easter. It’s a flexible 7-day Aldi plan designed to make cheap, healthy meals easy. All ingredients are from Aldi, and the plan includes recipes and an itemized shopping list for simplicity.
The recipes are simple, thrifty, and great for using pantry staples and leftovers. They’re comforting yet healthy, perfect for meal planning and weekend prep.

Why Aldi
For those who are new here, I don’t work for Aldi and have no affiliation with them, but they’re my favorite grocery store. Like many, I used to shop at Aldi and then visit other stores for extras, which took too much time and money. So, I used my chef training to create recipes using only Aldi ingredients, and it’s been a hit! You can use these meal plans as a weekly guide or for cheap meal inspiration, offering everything from easy dinners to one-pot recipes and baking treats. Be sure to try the brownie recipe!
About the Aldi budget meal plan
Meal planning has been a part of my life since childhood. Growing up in a single-parent household on a fixed income taught me how to budget and avoid waste. As a professional chef with a Cordon Bleu diploma and 10 years in the kitchen, I know how to stretch ingredients and create great meals on a budget.
These meal plans are designed to help you with that. I’ve included 6 recipes, all using Aldi ingredients, so you can enjoy leftovers or even plan for a takeaway night. You’ll also get a shopping list and tips to make the most of each recipe.
I believe simple, affordable, and accessible recipes are key, and I hope these plans make your meal prep easier!
The Details
These meals are designed to serve a family of four, with some recipes providing enough leftovers for another meal. While no meal plan fits everyone, I’ve aimed to create something that appeals to most.
The shopping list covers everything you need, with repeat use of condiments, sauces, and spices, so be sure to check your pantry first.
This plan is flexible, allowing room for snacks, desserts, and even a night out. You can easily adjust it to fit your schedule. Let me know if you’re using these plans—it helps me decide if I should keep sharing them!
