Fried courgette is one of the best side dish/ snacks/ starters that you can make. Not only are these crispy courgette bites so cheap to make but they're easy and you only need a few ingredients.
Courgette really benefit from being fried because they have such a high water content it helps to give them some flavour and structure.
These crispy bites are dipped in a light tempura style batter and fried in a little bit of vegetable oil until the batter is golden and the courgette slices are tender.

Ingredients needed
- courgettes (zucchini)
- plain flour
- eggs
- avocado
- parsley
- yogurt

Step By Step Instructions
Step 1 & 2
- Start by cutting the courgette into ½ inch or 1.25cm thick slices. We want the pieces to be thick enough that they retain their structure during the cooking process.
- Sprinkle the courgette with some sea salt or regular salt. Let the slices sit on some absorbent kitchen paper for about 5 minutes just to pull out some of the water.
- Use two separate bowls. In bowl 1 place some plain flour and season with salt and pepper. In bowl 2, whisk 2 eggs and sprinkle in some salt.
Step 3 & 4
- Heat a pot of oil to 180c or 355f you can use a deep fryer or a pot with some oil. Just be sure to use a pot with high sides to protect you from any accidents.
- Lightly coat a slice of courgette in a dusting of flour. Dip into the egg and back in to the flour. Shake off any excess.
- Very carefully drop the battered courgette slice into the hot oil and fry for about 3-5 minutes until the batter is golden and the courgette is tender.
- To make the avocado sauce, simply scoop out the avocado flesh and place in the bowl of a food processor with the yogurt, some salt and pepper and a drizzle of olive oil and blend.
Hint: Be sure that the oil is hot enough to fry the courgette. When frying oil isn't hot enough it tends to absorb into the courgette and make a soggy mess.

This is most likely because they were sliced too thin. As they cooked the water started to get pulled out and there wasn't enough structure in the courgette to keep it together. Slices should be about ½ inch thick.
This is most likely because the oil wasn't hot enough during the frying process. It needs to be 180ºC to get that crispy outer crust.
Variations
There are a few variations you can add into these fried courgette
- Parmesan cheese - add some parmesan cheese to the flour before dipping in the courgette slices
- Breadcrumbs - you can add a layer of breadcrumbs to make the courgette extra crispy. Dip the slices in flour, then egg, then in the layer of bread crumbs and fry.
Equipment
You definitely don't need a lot of equipment to make these crispy fried courgette. A real saviour in the process is a thermometer. Here's what I've used
