Easy Creamy One Pot Tomato Mascarpone Sauce and Pasta

Ingredients

  • 500 g (1 lb) spaghetti *see notes
  • 1 tablespoon olive oil
  • 1 brown onion, diced
  • 3 cloves garlic, minced
  • 400 g (14 oz) tin cherry tomatoes *see notes
  • 1 vegetable stock cube or stock pot dissolved in 600 ml (2 ¼ cups) boiling water
  • Juice of 1 lemon
  • 75 g ( cups) mascarpone *see notes
  • 300 g (4 cups) spinach, rinsed
  • 25 g (¼ cups) parmesan, shredded

Instructions

Heat the Oil:

  • In a large shallow pan with high sides, heat the olive oil over medium heat. Once the oil is hot and shimmering, add the diced onion and minced garlic. Cook gently for about 5 minutes until the onion is soft and translucent and the garlic is fragrant.

Add Tomatoes and Stock:

  • Pour in the tinned cherry tomatoes and the dissolved vegetable stock. Taste and adjust the seasoning as needed.

Cook the Pasta:

  • Add the spaghetti to the pan, ensuring the noodles are submerged in the stock. Simmer uncovered for about 12-15 minutes until the pasta is cooked and the liquid has thickened into a sauce. Stir occasionally to prevent the pasta from sticking to the pan or clumping together. If the pasta starts to look dry, add hot water in 200 ml increments.

Finish the Sauce:

  • Once the pasta is al dente, remove the pan from the heat. Stir in the mascarpone and spinach. Cover the pan with a tight-fitting lid and let the spinach wilt into the sauce for 5-7 minutes.

Final Touches:

  • Remove the lid, stir the pasta, and add the lemon juice. Adjust the seasoning if necessary. Divide the pasta among bowls, top with shredded parmesan, and serve immediately.

  • Pasta Options: Whole-grain pasta can be used instead of white pasta.
  • Tomato Options: Chopped or crushed tomatoes can be substituted for cherry tomatoes.
  • Cooking Tip: The spaghetti-to-liquid ratio is crucial since this is a one-pot recipe. Using a different type of pasta may require more liquid and a longer cooking time.
