Creamy, silky and easy butternut squash pasta perfect for cozy weeknights. This is a quick and easy pasta that uses all ingredients from Aldi and is on the table in under 45 minutes.
Cook the pasta according to the package instructions and set aside while you make the sauce.
In a high sided frying pan over a medium heat gently sauté the garlic until soft. Add the small diced butternut squash and let colour in the pan until just starting to turn golden. About 5 minutes.
Pour the 500ml stock into the pan to cover the squash. Bring to a boil and turn down to a gentle simmer and cook until the squash is soft and cooked through. About 15-20 minutes. Once the squash is soft, place into a blender with some of the cooking stock and blend until smooth. Add more stock until the desired consistency is reached. If you have any stock leftover just discard it.
When the sauce is smooth, place it back in the high sided pan and add the grana padano and mix well. Add the penne to the pan and toss well with the sauce.
