Easy 30 Minute Peanut Butter Chicken

Ingredients

  • 500 g chicken breast, cut into bite-sized pieces
  • 2 small shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon honey
  • 60 ml hoisin sauce
  • 60 ml soy sauce
  • 1 tablespoon rice vinegar
  • 125 g smooth peanut butter
  • 100 ml coconut milk
  • 1 small red chili, finely chopped (optional)
  • 2 red bell peppers, sliced
  • 1 tablespoon cornstarch
  • 30 ml vegetable oil or sesame oil
  • Salt and pepper, to taste
  • Water, as needed to thin the sauce
  • Garnish: sesame seeds and green onions or chopped peanuts and fresh basil leaves

Instructions

Prepare the Chicken:

  • Season chicken with salt and pepper. Toss with cornstarch until evenly coated.

Make the Sauce:

  • In a bowl, whisk together peanut butter, hoisin sauce, soy sauce, honey, rice vinegar, coconut milk, and chili (if using). Add a splash of water if needed to loosen the consistency.

Cook the Chicken:

  • Heat oil in a large pan over medium-high heat. Add chicken and sear for 3–4 minutes on each side until golden and cooked through. Remove from the pan and set aside.

Sauté Aromatics and Peppers:

  • Reduce heat to medium. Add a little more oil if needed, then sauté shallots, garlic, and ginger for 1–2 minutes until fragrant. Add red bell peppers and cook for 2–3 minutes until just softened.

Combine with Sauce:

  • Pour in the sauce and stir continuously for 2–3 minutes until slightly thickened. Return the cooked chicken to the pan and toss to coat evenly.

Serve:

  • Garnish with sesame seeds and green onions or chopped peanuts and fresh basil. Serve hot with rice or noodles.

Notes

  • Spice: Add red pepper flakes or hot sauce for an extra kick.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.
