Easy and affordable ingredients from Aldi. *Soft cheese is the same as cream cheese.
Gently cook the broccoli until it's tender. Drain the water and save 250ml (1 cup).
Gently pan fry the gnocchi in a cast iron skillet or high sided frying pan.
Add the vegetable stock and soft cheese. Let it melt into a thick and creamy sauce. Melt some of the mozzarella into the sauce.
Stir in the tender broccoli and make sure everything is coated in the cheese sauce. Sprinkle with the rest of the mozzarella.
Bake the gnocchi skillet in the oven just until the cheese is bubbling and golden. About 10 minutes. 🙌🏻
