Simple ingredients all from Aldi. You can use brisket for a very indulgent and incredible stew or use stewing beef to keep it more affordable.
When the beef is diced dry it off with a paper towel to ensure that it sears well. Season it well with sea salt.
Heat the oil in a Dutch oven and get a really good sear on the beef. That's a huge part of building the flavour with stew.
Once the beef is seared take it all out of the pot and set it in a bowl. Add the onions, garlic, carrots and celery to the pot.
Add in the flour and the tomato paste. Give it all a stir and let the flour cook out for a few minutes.
Add the beef back to the pot and pour in the ale and beef stock. Toss in a bay leaf too!
