Ingredients

  • 4 fresh, ripe peaches (about 500g), sliced
  • 120 g of spinach, about 4 cups
  • 2 medium avocados, sliced
  • 60 grams of goat cheese, about ¼ cup, crumbled
  • 70 grams of almonds, about ½ cup, toasted and roughly chopped

For the dressing

  • 60 ml of olive oil, ¼ cup
  • 3 tablespoons of balsamic vinegar, 45ml
  • 1 tablespoon of honey, 15ml
  • Salt and pepper to taste

Instructions

Toast the almonds

  • Start by toasting the almonds. Place them in a dry pan over medium heat. Stir them frequently and watch closely to prevent burning. Once they're golden and fragrant, remove from heat and let them cool. Then, roughly chop the toasted almonds.

Make the dressing

  • In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.

Assemble the salad

  • In a large salad bowl, combine the sliced peaches, spinach, and avocado.
  • Drizzle the dressing over the salad ingredients in the large bowl. Toss gently to combine, ensuring all ingredients are evenly coated.
  • Sprinkle the crumbled goat cheese and toasted almonds over the top of the salad.
  • Serve immediately. Enjoy this refreshing, flavorful salad as a light lunch or as a side dish with your favorite summer meal.

  1. Choose ripe but firm peaches and avocados for the best texture.
