This juicy Peach Spinach Salad with Avocado is the perfect fresh salad to enjoy on a warm summer day. 70gramsof almonds, about ½ cup, toasted and roughly chopped
For the dressing
60mlof olive oil, ¼ cup
3tablespoonsof balsamic vinegar, 45ml
1tablespoonof honey, 15ml

Instructions
Toast the almonds
Start by toasting the almonds. Place them in a dry pan over medium heat. Stir them frequently and watch closely to prevent burning. Once they're golden and fragrant, remove from heat and let them cool. Then, roughly chop the toasted almonds.
Make the dressing
In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
Assemble the salad
In a large salad bowl, combine the sliced peaches, spinach, and avocado.
Drizzle the dressing over the salad ingredients in the large bowl. Toss gently to combine, ensuring all ingredients are evenly coated.
Sprinkle the crumbled goat cheese and toasted almonds over the top of the salad.
