Easy Homemade Loaded Chicken Nachos

Loaded Chicken Nachos blend crispy tortilla chips with juicy fajita-spiced chicken and melted cheese, topped with jalapeños, tomatoes, and onions. Easy to make, these nachos are perfect for a casual meal, offering a delicious mix of flavours and textures.

Ingredients

  • 500 g chicken mince
  • 1 package fajita seasoning, or make your own
  • 2 tablespoons olive or vegetable oil
  • 1 red onion, finely diced
  • 200 g shredded cheddar cheese
  • 200 g Tortilla chips

Homemade fajita seasoning

  • 2 tablespoons Cajun spice
  • ¼ teaspoon chilli powder
  • ¼ teaspoon smoked paprika

For topping

  • 1 avocado, chopped
  • 2 tomatoes, diced
  • 1 jalapeno, sliced
  • Sour cream, light creme fraiche
  • Green onions, sliced
  • ½ bunch of chopped coriander
  • Salsa

Instructions

  • Heat the olive oil in a nonstick pan and gently sautee the sliced onion for about 5 minutes. Once the onion has started to soften add in the chicken and continue to cook for a further 8-10 minutes until the chicken is cooked through.
  • Once the chicken is cooked, place it into a bowl and place the tortilla chips in the skillet.
  • Spoon the cooked chicken over the tortilla crisps and top with the shredded cheddar cheese. Place the skillet back in the oven and bake for another 10 minutes until the cheese has melted.
  • Remove the nachos from the oven and top with mashed avocado, chopped tomatoes, coriander, sour cream and sliced jalapenos.

Notes

  1. If you prefer to skip the fajita kit, just use 2 tablespoons of Cajun seasoning to coat the chicken.
  2. You can use fat-free Greek yoghurt over the nachos instead of creme fraiche. It’s cheaper and has less fat and calories.
  3. You can use a bag of tortilla chips rather than making your own to make this recipe even faster.
