Simple ingredients all from Aldi. This soup is thickened with potatoes and is naturally dairy and gluten free!
Give the leeks time to soften over a lower heat. Avoid getting any colour on them.
Cube the potatoes large enough that they don't break down during cooking.
Mix the potatoes into the leeks and season everything really well. Potatoes love salt so be generous!
Shredding the chicken rather than cubing means that you get chicken with every bite.
Add the chicken into the pot and stir in lots of chopped parsely. Serve it piping hot with some fresh sourdough.
