Fudgy Chewy Browkies (Brookies)

Thick, chocolatey and chewy browkies! The Savvy Bites famous brownie recipe made into a cookie!

Ingredients

  • 95 g (3 ⅓ oz) plain flour
  • 2 tablespoons (2 tablespoons) cocoa powder
  • 1 teaspoon (1 teaspoon) baking powder
  • ¼ teaspoon (¼ teaspoon) salt
  • 225 g (1 ⅕ cups) dark chocolate, chopped
  • 56 g (2 oz) butter, salted or unsalted
  • 2 (2) eggs *room temperature
  • 100 g (3 ½ oz) caster sugar
  • 90 g (3 ⅙ oz) demerara sugar
  • 1 teaspoon (1 teaspoon) vanilla
  • 85 g (3 oz) dark or milk chocolate chips

Instructions

  • Preheat the oven to 160c and line a baking tray with baking paper.
  • You need 3 bowls for this recipe.
  • Bowl 1- In one bowl mix the flour, cocoa powder, baking powder and salt.
  • Bowl 2- In a separate bowl place the chopped chocolate and the butter and melt in the microwave at 30-second intervals. 
  • Bowl 3- Whisk the eggs and sugars with an electric hand whisk on high for about 4 minutes until the eggs and sugar are soft pale and very fluffy.
  • Once the chocolate and butter are melted and well mixed pour it into the egg and sugar mixture and whisk for another minute. 
  • Fold the flour and cocoa powder mixture into the egg mixture.
  • Use a spoon or small ice cream scoop to drop the batter onto the baking tray in tablespoon size drops. Bake in the preheated oven for 12-14 minutes or until the browkies are flat and crackly on top.
  • Remove from the oven and sprinkle with sea salt immediately. Let them cool on the tray for about 10 minutes before removing them to a cooling rack to cool all the way. 

Notes

  1. The trick to these brownie cookies is to not overbake them making sure that they stay fudgy inside.
