Easy Rose Pasta Sauce- Italian Pink Sauce

Rose pasta sauce is a creamy and flavorful blend of rich tomato sauce and smooth cream, creating a luxurious, velvety coating for your favourite pasta.

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced *see notes
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 500 ml tomato passata
  • 200 ml single cream
  • 25 g parmesan, grated
  • ½ bunch fresh parsley, chopped
  • 500 g spaghetti, cooked according to package instructions

Instructions

  • In a heavy-bottomed pan heat the olive oil over medium heat and gently saute the onions and garlic until softened. Add in the Italian seasoning.
  • Once the onions are soft and translucent, add in the tomato passata or the chopped tomatoes if you're using them. Season with salt, pepper and bring to a gentle simmer. Continue to simmer uncovered for about 10 minutes stirring occasionally.
  • Pour the cream into the tomato sauce and stir well.
  • Add the grated cheese to the sauce and stir to melt. Taste again and adjust the seasoning. *A squeeze of lemon is optional, but can really brighten up the sauce.
  • Stir in the fresh chopped parsley and Add some extra pepper if required.
  • Toss the cooked pasta with the sauce and serve with extra cheese.

Notes

Note 1- Adding ½ teaspoon of salt will pull the moisture out of the onions helping them to soften more quickly.
Note 2- Simmer uncovered to help thicken the tomato sauce.
